Grandma-style pizza is a thin, rectangular pan pizza made with hand-stretched dough, house-made tomato sauce, and fresh mozzarella, baked until the edges are crispy. It is a Long Island favorite and one of the signature pies at da-Angelo Pizzeria & Ristorante, 815 Willis Ave, Albertson, NY.

What makes a pie Grandma-style?

A Grandma pie is baked in a square or rectangular pan, so it comes out with a crisp, golden bottom and crunchy edges. We stretch the dough by hand and keep it thin, giving you a light base instead of a thick, bready one. We make the sauce in-house, and the cheese is fresh mozzarella.

That is the whole idea: simple ingredients, a hot pan, and a crust that holds up when you pick up a square. It’s different from our New York slice, which is wide, thin, and foldable, and from our Sicilian pizza, which is thicker and airier.

How is it different from Sicilian pizza?

Both are square-pan pizzas, but you eat them very differently. Grandma-style is thinner and crispier with a more delicate base. Sicilian is thicker, with a taller, focaccia-like crust. If you like a crunch in every bite, start with the Grandma pie. If you want a soft, airy crust, ask for the Sicilian.

Our Pizza Guide covers all three styles side by side, so you can compare before you order.

How do we make ours?

We make our dough fresh every day and let it proof slowly so it bakes up light and flavorful. We make the sauce in-house, and the mozzarella is fresh. Nothing about the recipe is complicated. We make it the same careful way every day, in the same kitchen on Willis Avenue where we’ve served the neighborhood since 2003.

What can you order alongside it?

The Grandma pie is one of the dishes people come in for, and it sits alongside the rest of the kitchen: the Margherita with crushed plum tomatoes, basil, and fresh mozzarella; white pizza with ricotta, mozzarella, and garlic; garlic knots; chicken parmigiana; baked ziti; and more. See everything on the full menu.
